About this deal

Aldi's wide range of festive mains offers something for everyone this year. It's one of the few supermarkets that has a vegetarian main - its root vegetable and camembert nut roasts. Salted Caramel Cream Profiteroles: Swirl cooled homemade Salted Caramel Sauce through whipped cream to fill your choux buns. Drizzle extra sauce over the top and sprinkle with a little flaked sea salt. Coffee Chocolate Profiteroles: Fill the choux buns with coffee-flavoured pastry cream and cover in a chocolate sauce. This is a popular flavour for éclairs in France. Lightly oil an 18cm loose-bottom deep cake tin and line the sides and base with baking parchment. Put the milk chocolate and 200g dark chocolate in a large heatproof bowl over a pan of barely simmering water and gently heat, stirring occasionally, until melted. Remove from the heat and cool slightly.

There's plenty of choice for veggies and vegans too, from a baking camembert to a shareable vegan wreath. Starters and sides Whip the cream with the icing sugar until it just holds its shape, then fold in the vanilla bean paste or seeds. Fold in the cooled salted caramel, then chill for 10 minutes until cold and firm. Lightly whip again, then spoon into a piping bag fitted with a medium-size plain nozzle. To make the filling, put the butter, golden syrup, soft brown sugar and salt into a small pan and gently heat until the sugar has dissolved. Set aside to cool to room temperature. Beat until you have a smooth ball of paste that has left the sides of the saucepan clean – this will probably take less than a minute. Then beat in the beaten eggs – a little at a time, mixing in each addition thoroughly before adding the next – until you have a smooth, glossy paste. At this stage, hold the greased baking sheet under cold running water for a few seconds, and tap it sharply to get rid of excess moisture. This will help create a steamier atmosphere, which in turn helps the pastry to rise.

Due to Covid restrictions last year, many families were forced to cancel Christmas, so this year why not go the extra mile and put on a spread to impress. How to organise your fridge for Christmas - find out what should go where and why to maximise space and safety Waitrose has a range of sophisticated offerings this year, as well as some exotic flavour combinations to bring a new twist to classic Christmas dishes. Piping bag:You can choose to use a reusable or a disposable piping bag. My preference is a 16Inch piping bag (even though I did use a much smaller one for the photos as my piping bags are a bright blue and wouldn't have looked great in the images!!) While I had enjoyed simple cream puffs before, I had never had chocolate profiteroles like these. This easy profiterole dessert had been inspired by an experience I had at a classic French bistro near Place des Victoires. It was a picturesque restaurant in the 1st arr. and looked exactly like what you’d envision a French bistro to look like.

Smoked Salmon Éclairs. Mini choux pastry éclairs filled with smoked and poached salmon, crème fraîche, soft cheese, single cream and butter, with lemon juice and chives. Finished with a bronze lustre. Available from 29 November. Some believe that traditional profiteroles should be filled with sweetened whipped cream (crème chantilly) or pastry cream (crème pâtissiere), whilst others prefer vanilla ice cream. Vanilla ice cream and pastry cream are the most common fillings in France, whereas sweetened cream is used more commonly in the States. We don't have Asda's full list of products yet, but there are some enticing options on the menu so far. To freeze: FreezeuUnfilled choux pastry shells in a freezer-safe container for up to 2 months. Spicy pork, 'nduja sausage and a sprinkle of red pepper flakes. Available from 29 November. Some foods may lose some of their sparkle when frozen, so think about how you intend to use them. For example, soft cheeses such as brie or goats cheese which lose creaminess and become grainy, whilst harder cheeses will become crumbly and won't make for a star slice on the day.
